BBQ Octopus

I first tried baby octopus about ten years ago. From memory it was after seeing it in a delicious magazine while having my tyres changed. At the time we were right into experimenting with food and challenging ourselves in the kitchen. Actually that very magazine is probably attributable for establishing my love of cooking. Thank goodness the tyre man gave it to me! The picture spoke summer. You can cook this dish up as a side for tapas or add it to a salad like we did on Sunday night. Personally I think calamari is way over rated compared to these tasty molluscs.

P.S. Cook the kilo! We wish we had.

BBQ Octopus

Eat as part of tapas or add to a salad

-= Ingredients =-
300 ml red wine
2 tbs balsamic vinegar
1 kg baby octopus ; cleaned
2 tbs soy sauce
1/4 cup Sweet chilli sauce ; (60ml)
1/4 cup Tomato sauce ; (60ml)
1 cup chopped parsley or coriander

-= Instructions =-
Place wine and balsamic in a saucepan with octopus. Bring to boil, reduce heat to low and simmer for 20 minutes. Drain octopus, place in a bowl with soy, tomato sauce and sweet chilli sauce. Stir to combine. Heat barbecue to high and grill octopus for 5-6 minutes, turning occasionally, until cooked or lightly charred. Garnish with parsley or coriander.
