Sweet miso steak with udon noodles

It’s true I love Asian food. But for some reason I tend to steer towards Thai, Chinese, Vietnamese, Malaysian etcetera. This week however I stepped afield and added Japanese to my meal plan. We really don’t eat Japanese enough and surprisingly it doesn’t need to be difficult. I cooked the below recipe easily within thirty minutes. Which makes it perfect for a mid week meal. Now I have a few extra ingredients in my fridge I’m out to seek more Japanese recipes!

Note: – I used a combination of shimeji mushrooms and button. Mirin and Miso paste can be found in the Asian aisle at most good supermarkets.

Sweet miso steak with udon noodles

-= Ingredients =-
100 gram Miso paste
1/3 cup Mirin
1/3 cup Brown sugar ; firmly packed
500 gram beef, sliced
600 gram Udon noodles
1 tablespoon Butter
350 gram Asian mushrooms
250 gram snow peas ; sliced on an angle
2 each spring onion ; thinly sliced
2 cloves Garlic ; crushed

-= Instructions =-
Stir miso, mirin and sugar in a bowl. Toss with beef and marinate for 15 minutes.

Heat butter in a large wok over medium-high heat. Add garlic and saute for thirty seconds. Add mushrooms to wok and cook, tossing, for 3-4 minutes until softened. Remove from pan and set aside. Add beef and marinade to the pan and cook, turning beef, for 5-6 minutes until brown and lightly carmelised. Return mushrooms to the wok with noodles and snow peas, then toss to combine. Divide among bowls and top with spring onion.

  2. Really enjoyed this. Was unable to buy Asian mushrooms at my local supermarket so only used button mushrooms.
