Carrot, Walnut and Ginger Cake

I think it’s hard to go past an old school carrot cake with cream cheese icing, coupled of course with a cup of tea. Particularly when carrots are in excess and there is left over cream cheese in the fridge 🙂 I love a moist cake. They seem to retain much more flavour than ones that are dry. This is a recipe that I have been meaning to try for a while that got rave reviews when put on a Taste Cooks Club Challenge last year. It is old school and comes from the Country Show Cookbook by Heather Henry. Needless to say it won all the awards at the Country shows. If you don’t like ginger then just add more sultanas.

Carrot Cake

1 cup self-raising flour
1 tsp bicarb soda
1 tsp ground cinnamon – I always add a bit more for goo
1 cup brown sugar ; firmly packed
1 1/2 cups grated carrot
1/2 cup sultana’s
1/2 cup chopped glace ginger – optional as it has a stron ; just swap for more sultana’s
1/2 cup chopped walnuts
2 each eggs, lightly beaten
2/3 cup sunflower oil
~~ Cream Cheese Icing ~~
115 gram Cream cheese ; (4 oz)
28 gram Butter ; (1 oz)
225 g Icing sugar ; (8 oz)
1 tsp vanilla
walnuts, ; to decorate

-= Instructions =-
Preheat oven to 160′ C
Grease a 15cm x 25cm loaf tin, line the base with greased paper.
Sift flour, bicarb soda & cinnamon in a medium bowl and stir to combine with an electric mixer
Stir sugar, carrot, sultanas, ginger and walnuts into mixture and in a separate bowl combine the eggs and oil before adding to the flour mixture
Beat on medium speed for 5 minutes
Mixture will be fairly runny
Pour mixture into prepared loaf tin and bake for approximately 55 minutes
Turn onto wire rack to cool.

For icing sift icing sugar into a bowl, combine with softened butter, vanilla extract and cream cheese. Mix well.

Once cake is cooked, ice with cream cheese mixture and dress with walnuts.

    seriously I was about to make carrot cake muffins today but I had no walnuts!! great minds think a like Kat. Haven’t tried it with ginger yet, thanks for the idea. I made choc banana muffins instead.
