Tikka Chicken Naan Bread Pizza

The chicken tikka naan bread makes for a great change to a pizza base. The pizza is very easy to prepare. You can either buy the already made naan bread from the grocery store or make naan bread from scratch. I prefer to make mine as it is very easy. Although I do have a kitchenaid mixer which makes light work of kneading. The coriander and natural yoghurt make for a refreshing touch. We served these with a light salad. I stretched my dough to make 11 naan bread (about 12cm in length), 10 for the bigger kids and one for the smallest. Mind you the smallest came back wanting more!

2 1/2 medium Brown onions ; sliced thinly
1 1/4 tablespoon Brown sugar
500 gram Chicken tenderloins
1/4 cup Tikka paste ; (75g)
1/3 cup Mango chutney ; (110g)
4 ea Naan bread
1/3 cup Almonds ; slivered, roasted
1/3 cup Yoghurt – greek
1/3 cup Raisins ; (50g)
1/3 cup Coriander leaves ; fresh

Combine onion and sugar in small bowl. Cook onion mixture on heated oiled flat plate, turning, about 10 minutes or until mixture caramlises. Meanwhile, slice chicken lengthways into thin strips; combine with paste in medium bowl. Cook chicken on heated oiled grill plate until cooked. Spread chutney over naan; top with onion, chicken and nuts. Cook pizzas on hot grill plate about 5 minutes or until bases are bowned lightly. Serve pizzas topped with yoghurt, raisins and coriander.
