Swedish Tasty Finds – Cabbage Salad

Today begins the start of our European holiday. Gothenburg in Sweden. My blog will take on a slightly different angle for the next few weeks. Bringing you a view of European food, a taste sensation.

Gothenburg is a little chilly compared to back home. So we went looking for a warming dinner. We came across a cute local pizzeria tucked away in a back alley and decided upon cappriosca pizza. It was so good I went and found it for lunch the next day, only this time I chose pizza don corleone. It was served with a cabbage salad which is suprisingly a perfect accompaniment to pizza. A simple salad made up of cabbage with a white wine vinaigrette and pepper.


Recipe – Cabbage Salad

500g cabbage, thinly sliced
5 tspn white wine vinegar
5 tspn vegetable or rape seed oil
2 tbspb caster sugar
1 tspn salt
1/2 tspn black pepper

Add cabbage to large bowl. Add the oil, vinegar, sea salt and black pepper. Mix the cabbage until all the ingredients are combined. Taste and add more vinegar/ black pepper if required. Allow to marinate in the fridge for a couple of hours. Serve cold.
