Sweet Potato Patties

Every now and then we like to cook sausages or steak for dinner with a side of veggies, only it is nice to be able to do something different to the standard mash. This is somewhere in the middle but light on flavour it’s not! Potato patty or kugel, the definition varies depending on the cooking method. Kugel is a Jewish staple side dish, cooked with, apple, spinach, zucchinis, potato etc it is a casserole/pie cooked in the oven. As I was short on time mine ended up as patties lightly fried. We used sweet potato. Kugel or patties, they are both extra tasty and the ingredients can be modified to suit your main dish. Unfortunately I didn’t get the best picture as we ate them before we realised the overcooked one was left!

Sweet Potato Patties

Main Ingredient: Potato

-= Ingredients =-
1 each potato ; grated
1 each sweet potato ; grated
1 each Egg ; lightly beaten
3/4 cup Bread crumbs
1 each onion ; grated
1 clove garlic ; crushed
salt & pepper to taste

-= Instructions =-
Coarsley grate all ingredients and squeeze out excess moisture. Combine all ingredients and mix to form a good consistency. If sticky, add more breadcrumbs. If too dry add an egg. Form mixture into balls and heat oil in a fry pan. Fry patties until golden and drain. Serve and enjoy.
