Banana Bread to rival Brumby’s and Gloria Jeans

With a love for banana bread, I am constantly trying out new recipes to find the ultimate ONE, the one to rival that of brumbys or gloria jeans. I love a good moist banana bread, full of flavour with a nutty crunch. I think I have found it and will give up my search from here on in. I used a recipe I found online and adapted it. Give it a try and let me know what you think.

Banana Bread Gloria Jeans style

-= Ingredients =-
1 cup Self raising flour
1/2 cup pecan nuts
3/4 cup hazelnuts
1 teaspoon Bi-carbonate soda
1 teaspoon Cinnamon
3/4 cup Brown sugar
120 gram Butter
2 each Egg
3 each Bananas ; overripe, mashed
1/3 cup golden syrup
1 teaspoon Vanilla extract

-= Instructions =-
Cream butter and brown sugar. Crush the nuts in a mortar and pestle, leaving a few little chunks to add crunch. Add eggs and and beat until well combined. Mix flour, cinnamon, bicarbonate of soda and nuts into a bowl and set aside. Add golden syrup and vanilla extract to mashed bananas and mix lightly. Add half of the flour mixture and half of the banana mixture to the butter mixture and mix until well combined. Add remaining flour and banana and mix until well combined. Pour mixture into a well greased and lined loaf tin. Bake at 160′ for approximately 60-80 mins. Check at 45 mins as the originally recipe said 45-50 minutes but mine took a lot longer.
