Kat’s Amatriciana pasta

If you’ve wondered where I was, I have a good excuse! Home alone, working 4 days a week and playing entertainer to DS who is nearly two and very active!

Tonight I got home and realised I needed to use up some bacon and we hadn’t had pasta for a while. Initially I thought of making my pesto pasta with caramelised onions however I was all out of pesto and had no time to whip up another lot. So from there I decided on a tomato base and the amatriciana was born.

Amatriciana sauce originates from Italy and is a tomato sauce with herbs, smoked bacon etc. Here is a quick version.

Kat’s Amatriciana Pasta

-= Ingredients =-
250 gram pasta
1 each onion ; chopped
1/2 each Capsicum ; chopped
1 clove garlic ; crushed
5 each Mushroom ; sliced
4 rashers Bacon ; diced
1/2 each Red chilli ; diced
1 each Chorizo sausages ; sliced
400 gram passata ; or diced tomatoes
1 pinch salt
1 pinch pepper

-= Instructions =-
Boil water, add salt and pasta cook until al dente. While cooking, fry garlic, chilli, onion, bacon, chorizo until chorizo is cooked. Add capsicum, passata or diced tomatoes, basil and mushrooms, season and simmer until cooked. Drain pasta. Serve pasta with tomato chorizo mixture, parmesan cheese and garlic bread.
